Uzundzhovo katmeri

Ingredients:

wheat flour, lard, salt,

water, yeast

 

Method:

Sift the flour, add yeast, salt and water. Make dough and shape a few balls from it. Roll out each ball with a rolling-pin, grease with melted lard, roll up from both ends and make a ball again. Roll out the balls into small cakes and roast them on both sides in a sach (clay dish) greased with lard.



Kachamak (hominy)

corn flour, water, salt, lard, cracklings

 

Method:

Bring the water to the boil. Add the salt and the corn flower, while stirring constantly until the mixture thickens. Spread in a baking dish and grease with melted lard on top. During the winter serve with cracklings.
