Boiled wedding wheat

Ingredients:

hulled wheat, milk (cow milk or a mixture of sheep and goat milk), butter, lard, sunflower oil, flour, caramelized walnuts, raisins, blueberries (optional, for sprinkling)

 

Method:

Soak the wheat on the previous day and change its water regularly. Then start boiling it. Wash down the semi-ready wheat a few times with cold water until it clears up, and soak with salt. Leave it to rest for the whole night (covered with a blanket). In the morning change the water and start boiling the wheat again. When it is fully boiled, add the milk. Fry the butter, lard and oil together with the flour. Add the mixture to the boiled wheat and stir to smooth it. Serve with caramelized walnuts, blueberries and raisins.
