Pryasol

Ingredients:

carp, grated tomatoes, roasted dried peppers, a hot pepper, garlic, parsley, oil, flour, sugar, salt

 

Method:

Clean the fish, cut into slices, roll in flour and fry. Transfer to an earthen pot, add salt and a little water. Cook the grated tomatoes with a pinch of sugar. Top the fish with the sauce. Tear the roasted dried peppers and add them to the rest of the ingredients in the pot. Crush the garlic with the hot pepper and add to the rest. Cut finely the parsley and sprinkle over the fish.



Treenitsa

Ingredients:

one organic chicken, onion, dried pepper, parsley, fennel, savory, cow parsley, paprika

  • For the treenitsa: egg, flour

 

Method:

First, make the treenitsa. Mix the egg with the flour to obtain crumbs. Sift and leave in the sun for a few hours to let it dry up.

Cook the chicken in water with the onion and the dry pepper. After the meat is ready, take everything out of the pan. Add the treenitsa and stir so as not to let it stick. Boil for about 10 minutes. Add the green seasoning. In a deep plate, place part of the meat, add the treenitsa and sprinkle with paprika.



Maznitsa

Ingredients:

  • For the flour: flour, yeast, salt, water
  • For the stuffing: white cheese, eggs, lard (margarine), oil

 

Method:

Make pastry from the ingredients. Divide into balls, spread by hand, add stuffing and roll up. Leave aside to rise. When it rises, flatten a bit and leave aside to rise once again. Bake in the oven.



Swirled banitsa

Ingredients:

  • For the flour: flour, yeast, salt, water
  • For the stuffing: white cheese, eggs, lard (margarine), oil, egg for spreading

 

Method:

Make pastry from the ingredients. Divide into balls, roll out (pull) sheets, grease, add stuffing and roll up. Arrange in a baking dish, spread a beaten egg over and bake in the oven.



Dried peppers stuffed with clams





Ingredients:

clams, onion, groats, dried peppers, salt, oil for frying

 

Method:

Wash the clams and boil. Take them out of the shells and wash once again. Chop finely. Peel the onion, chop finely and brown in oil. Add the clams and the groats. Use the mixture to stuff the peppers.





Hominy





Ingredients:

corn flour, salt, water; optional: oil, white cheese, paprika

 

Method:

Put the water with some salt in a pan on the stove and bring to the boil. In a separate pan mix the corn flour with some water to obtain a smooth mixture. Add to the boiling water and stir until the hominy thickens. While still hot, move to a dish and cut into servings. Optional: sprinkle with oil, crumbled white cheese and paprika.





Fish soup

Ingredients:

fish (carp), chopped sour cabbage, groats

 

Method:

Fry the cabbage and the groats. Clean the carp and place in a baking dish. Add to it the fried mixture. Add some water and bake.
