Flat cake with dzhumerki (cracklings)

Ingredients:

cracklings

  • For the flour: yeast, flour, egg white, sugar, salt, lukewarm water, egg yolk for spreading

 

Method:

Dilute the yeast in some water, add flour, sugar and salt. Leave aside to rise. Once the yeast is ready, add the rest of the ingredients and make dough. Leave it aside to rise. With your hands, spread out a large and thick sheet of pastry. Sprinkle over with some cracklings. Fold the sheet, sprinkle with cracklings, fold again, and add the cracklings. Finally, shape the dough into a flat cake, leave to rise again, and when ready, roll out a bit (by hand or as you wish), move to a greased baking dish, spread egg yolk over the cake, prick with a fork here and there and bake.



Galushki (dumplings)

Ingredients:

potatoes, white cheese, paprika, oil, stale bread crumbs

  • For the flour: flour, egg, salt, water

 

Method:

Use the ingredients to make dough. Shape like wicks and tear into small balls (galushki).

Peel the potatoes, cut them in large slices and put them in a pan with water to boil together with the dough balls. When these are ready, take them out and put in a baking dish. Sprinkle them with bread crumbs browned in advance in oil and paprika. Add crumbled white cheese. Stir well and serve.



Tachki (Banat ravioli)

Ingredients:

onion, carrots, potatoes, white cheese

  • For the flour: flour, egg, salt, water

 

Method:

Peel and boil the vegetables. Make dough, spread in a sheet and sprinkle the sheet with white cheese. Roll up the sheet, cut the tachki pieces and add to the boiling vegetables. Cook until the tachki pop up on the surface.



Krofli biscuits

Ingredients:

flour, lard, ground cracklings, baking soda, yoghurt, sugar, eggs

 

Method:

„Extinguish“ the baking soda in the yoghurt. Add the rest of the products and make dough. Leave aside to rest for 15 minutes, and then roll out into a thin sheet. With the help of a glass or molds cut out the krofli, arrange them in a baking dish and then bake.
