Skordhalia
Ingredients:
sunflower oil, garlic (1-2 bulbs), rusk, slices of bread (3 or 4), walnut, vinegar or lemon juice, salt
Method:
Fry the crushed garlic and the rusk in oil. Add 3-4 slices of stale bread soaked in water and mashed, vinegar (or lemon juice), salt to taste and crushed walnuts. Stir well and serve as an appetizer.
Trahana cereal
Ingredients:
trahana, meat or vegetable broth, croutons etc.
- for the brown sauce: onion, garlic, sunflower oil, butter, flour
- for the dough: wheat flour, salt, water
Method:
Make dough from the wheat flour, salt and water. Shape the dough into small flat loaves and leave them to dry up for two to three days. Grate them on a grater and leave to dry up again. Store the trahana pasta in textile bags.
Cook the trahana pasta like this: make brown sauce from the oil, onions and the crushed garlic and add the meat or vegetable broth. Bring the broth to the boil, add the trahana and cook until it thickens. When ready pour on top with fried butter and flour or add croutons fried in oil. By choice, combine with meat, vegies or shrimps.
