Beans

Ingredients:

haricot beans, 1 carrot, 1–2 onions, 1–2 tbsp. flour, paprika, salt, savory, mint, parsley, water

 

Method:

Soak the beans in water to soften during the whole night. On the next day boil the beans with chopped onion and the carrot. Make brown sauce with sunflower oil, onion, flour and paprika, and add to the boiled beans. Season with savory, salt, parsley and mint. Let simmer for about 2 hours until ready.



Pogacha (round loaf)

Ingredients:

wheat flour, salt, vinegar, sunflower oil, a pinch of sugar, lukewarm water, savory, fenugreek

 

Method:

Make dough with the wheat flour, salt, vinegar, sunflower oil, and set aside to rise. Then make balls from it and arrange them in a baking dish around one ball in the middle. Apply some raised dough decoration to the central ball – create flower or sun designs. Sprinkle the round loaf with savory and fenugreek and bake in a moderate oven. This round loaf is given away to the community on the Intercession of the Theotokos feast or on other religious feasts.
