Katmi
Ingredients:
wheat flour, 4-5 eggs, salt (1-2 tbsp.), water, yeast
- for roasting over a sach clay dish: lard or butter, broken egg yolk, onion
Method:
Sift the flour, add the eggs, salt and yeast and stir to obtain a thin smooth mixture. Use a ladle to scoop from the mixture and spread over a sach (clay dish) greased with lard, onion and broken yolk.
Tartola
Ingredients:
green garlic, vinegar, water, salt
Method:
Cut the shoots of the green garlic, add salt, vinegar and cold water. This cold soup was once consumed mostly in the summer during harvesting in the fields.
Kartalcheta from Dositeevo
Ingredients:
wheat flour, water, salt, yeast, lardwheat flour, water, salt, yeast, lard
Method:
Sift the flour, add the water, yeast and a little salt and make dough. Divide the dough into balls and roll them out with a rolling-pin to obtain sheets. Grease with lard each sheet and sprinkle with crumbled white cheese. Then roll up and make a ball. Roll out the balls with the rolling-pin and make small round loaves. Roast on both sides over a sach (clay dish) greased with lard.
Kartalcheta from Dositeevo
Sesame cake
Ingredients:
wheat flour, salt, water, yeast, sesame, sunflower oil
- for the syrup: water (3 cups), sugar (1-2 cups)
Method:
Sift the flour, add water, yeast, some salt and make dough. Shape the dough into a few balls and roll out each ball with a rolling-pin. Grease each sheet of dough with oil and sprinkle over with sesame. Arrange the sheets one over the other in a baking dish greased with oil. Grease the top layer of the cake with oil and sprinkle with sesame. Cut into pieces and leave to rise. Bake in the oven. When ready, pour over with syrup made of water and sugar. The syrup should be cold and the cake – warm.
