Thracian pickles

Ingredients:

cabbage, carrots, peppers, colerape, celery, water, coarse salt

 

Method:

Chop the vegetables and spread in a deep pan. Add some water – season with 1 tbsp. coarse salt per every liter of water. Put celery on top and press everything with a wreath of vine sticks. Keep up regular circulation of the vegetable brine.

Ingredients:

flour, salt, water, lard or oil, vinegar, spinach, eggs, white cheese

 

Method:

Make dough and roll out 4-5 sheets. Chop the spinach and while still raw mix with the eggs and the white cheese. Grease each sheet and spread some spinach mixture over it. Bake first from the bottom then turn upside down and bake from the top.
